Vegan French Toast

One of my favourite breakfasts growing up that my mom always would make was French Toast. I would come downstairs in the morning and smell the delicious smell of toast and vanilla extract. We always topped ours with maple syrup and fruit. It was phenomenal. So since going vegan, I’ve been trying to think how to make French Toast vegan friendly? Well, you replace the milk with some almond milk.. and replace the egg with… well… hmm, what do you replace egg with?

IMG_9338Banana! The secret not-so-secret ingredient is banana! You just blend it up with almond milk and it easily replaces the need for egg in the recipe.

  1. ½ cup almond milk
  2. 2 ripe bananas
  3. 1 chia egg (2 tsp chia seed, 4 tsp water)
  4. 1 tsp.cinnamon
  5. 2 tsp. vanilla extract
  6. 4 pieces of bread of choice
  7. fruit
  8. pure maple syrup
  9. a blender
  1. Preheat the stove or skillet to 350 degrees.
  2. In a small bowl, create your chia egg and let it sit for 5 minutes. It should become wet and goopy and resemble an egg texture.
  3. Break up and put 2 ripe bananas into a small blender.
  4. Add in 1/2 cups of vanilla almond milk.
  5. Add 2 tsp. of vanilla extract
  6. Add 1 tsp. of cinnamon
  7. Blend everything together so there's no chunks, and pour it into a bowl. You may or may not need more almond milk, depending on how much base you want to use. If you want more base, add more almond milk.
  8. Grease the pan with coconut oil.
  9. Dip whole grain bread (or bread of your choice) into the mix, and put it on the skillet or pan.
  10. Cook until it's brown and no longer soggy, and flip.
  1. This should be enough to make 6 pieces of french toast.
  2. Top with fresh fruit such as strawberries, banana, kiwi, pineapple and blueberries, and add pure maple syrup for best results.
