Banana Oat Pancakes

I’ve been experimenting with a lot of vegan foods lately, but pancakes have not been one of them. I usually add Greek yogurt and honey to them which adds a deliciously chewy texture. But since I’m eating almost fully vegan now, I decided to try to make pancake mix that was sugar free, flour free, and vegan! (No dairy, egg, or honey!!)

IMG_8613Not only do these pancakes LOOK beautiful, but they taste amazing! It was my first time creating a mix without using any animal by-products, so i am pretty pleased that they went so well.

Ingredients
  1. ripe bananas
  2. dry oats
  3. oat flour
  4. almond milk
  5. natural peanut butter
  6. cinnamon
  7. vanilla extract
  8. pure maple syrup
Instructions
  1. Preheat your skillet to 300 degrees
  2. In a large mixing bowl, mash up 1 ripe banana.
  3. Add in 1 cup of dry oats, and 1/2 cup of oat flour .
  4. Pour in 1 cup almond milk, 1 tsp. vanilla extract, 1 tsp. cinnamon, 2 tsp. pure maple syrup, and 2 tsp. peanut butter.
  5. Cook them on 300-350 degrees. Flip them when they start to turn a light brown, and they shouldn't take too long.
Notes
  1. I added peanut butter and fresh fruit on top, and finished it with some pure maple syrup.

    How is it possible that your pancakes always have the perfect shape and thickness?

      I’m not sure haha! I guess it’s the ingredients that i use, and i just make them thick.
