Raspberry Bliss Salad

Lately I’ve been experimenting with salads quite a bit. This one in particular has been my favourite because I absolutely love raspberries, and they taste amazing with everything on this salad. The weather is getting warmer, the sun is setting later, and I’m craving more refreshing and light dinners. This salad is perfect for sitting out back on the patio and lounging with the family in the summer time.

Ingredients
  1. Spinach and Arugula
  2. Raspberries
  3. Macintosh apple
  4. Avocado
  5. Cucumber
  6. Pecans or Walnuts
  7. Quinoa
  8. Raspberry Dressing
Instructions
  1. Wash your spinach and arugula well and leave it on a bowl to dry while you prepare your toppings.
  2. Cook your quinoa on the stove. [1/2 cup of quinoa, 1 cup or more of water.] Cook on medium until fluffy and stir frequently.
  3. Cut up your cucumber, apple and avocado and put them to the side.
  4. Wash your raspberries and put them to the side as well.
  5. Once your leafy greens are dry, put them in a bowl for yourself. Add on all your toppings, including pecans or walnuts.
  6. Finally, once your quinoa is done cooking, add it on top of the salad as well.
  7. Squeeze lemon over the top and add your favourite raspberry dressing (either balsamic or vinaigrette)

    The salad is defiantly something I’ll try sometime! But what is the good thing about Macintosh apples compared to other regular apples?

      Awesome 🙂 And Macintosh apples are really sweet but sour at the same time, and has a unique taste. You can use whichever apple you want, just Macintosh is my favourite
