Lemon Cashew Salad Dressing

If you’re looking for a creamy delicious vegan salad dressing, than you’ve come to the right place. This is a lemon cashew dressing that only has four ingredients and is super simple to make. It goes well on all salads, and can even be used as a spread on wraps and bread.

Ingredients
  1. 2 cups soaked cashews
  2. 1 whole lemon
  3. 2 tsp. sea salt
  4. 1 tsp. garlic
  5. 1/4 cup water
Instructions
  1. Prior to making your dressing, measure out 2 cups of cashews and let them soak in water for a 4 hours to soften them up. (This will make an easier texture when blending)
  2. When you're ready to make the dressing, put the cashews into a food processor and blend them together well.
  3. Cut open a lemon and in a separate bowl, squeeze out all of the juice. (make sure to pick out the seeds.) This should be about 1/2 cup of lemon juice.
  4. Add 2 tsp. of salt, and 1 tsp. of garlic.
  5. Add 1/4 cup of water for a thicker texture, or 1/2 - 3/4 cup of water for a more liquid texture.
  6. Blend the ingredients together well for 4 minutes until you have a creamy salad dressing.
Notes
  1. Store in an airtight container in the fridge.
