Cauliflower Curry

Thanksgiving meal number one: Cauliflower Curry.

Growing up, I never liked the word curry. I always associated it with something gross (I don’t know why), and to think of it now, I’ve only really tried it once. The traditional curry dish consists of meat and vegetables served with rice. So for Thanksgiving this year, I took my own spin on vegan curry and made it absolutely healthy and delicious.

IMG_8483This meal is super easy to make and only takes 15 minutes or so. It’s a great add on to your Thanksgiving dinner if you’re feeling like something healthy. For my dinner, I had a combination of the Cauliflower Curry as well as baked mac n cheese, mashed sweet potato, and chilli – it was delicious.
