Carrot Cake Oatmeal

Since fall has officially arrived here in Ontario, Canada, I think it’s appropriate that we all break out the autumn baking necessities. These include: pumpkin, carrot, apples, etc. So to celebrate the autumn weather, I have made a delicious Carrot Cake Oatmeal; but I’ll let you be the judge of that.

Ingredients
  1. 3/4 cup oats
  2. 1 large carrot
  3. 2 tbsp. brown sugar
  4. .5 tsp. cinnamon
  5. .5 tsp. nutmeg
  6. 1 tsp. peanut butter (optional)
  7. 1/4 cup almond milk
  8. 1 tbsp. dried cranberries
Instructions
  1. Measure out 1 cup of water and boil on the stove top.
  2. Once the water is boiling, add in 3/4 cup of oats, turn down to medium, and stir regularly.
  3. On the side, wash one large carrot and grade it with a cheese grader into small pieces. Put aside.
  4. Once the oats are nearly cooked, add in 2 tbsp. brown sugar, .5 tsp. cinnamon, .5 tsp nutmeg, 1 tbsp. dried cranberries, and if you'd like, 1 tsp. or more of peanut butter.
  5. Mix everything together, then add in your carrot shreds and mix again.
  6. You can also add in 1/4 cup almond milk for extra taste.
  7. Once the oats are cooked and ready, move them into a bowl and top with whatever you desire.
