BBQ Veggie Kabobs

The warmer weather is approaching and you know what that means: BBQ SEASON! Wait- I’m a vegan though.. does that mean I can’t participate in bbq season anymore?

Well no, OF COURSE you can! Vegans can still enjoy yummy bbq’s just as much as the next person? Here’s how:

IMG_2327Veggie Kabobs are super easy to make and only take a few minutes on the bbq to be ready to eat! They are awesome because a) it’s all plant based. and b) you can put essentially any vegetable you want on there!

Ingredients
  1. 12 Mushrooms
  2. 2 Zucchini
  3. 1 Red Pepper
  4. 1 Yellow Pepper
  5. 1 Sweet Potato
Instructions
  1. Simply start off by washing all your veggies. Cut them all up into large pieces because once you put them on the bbq, they will shrink.
  2. Once everything is cut up nicely, get your sticks (I used metal ones, that way you don' get any wood splinters in your food or mouth) and start adding your veggies on.With the ingredients I used, I had enough to make 8 sticks.
  3. Your next step is to start your bbq. Once it's hot, place them on the bbq and let them cook for a few minutes, then rotate then. Continue to do this until all of your veggies are cooked well.
  4. All together, mine took about 8 minutes. Once they are done and cooked to your liking, bring them inside and add em to a plate with anything you'd like. I made up a little salad and stuck them on the side.

As I was eating my salad, I decided to slide off the cooked veggies and eat them with the salad. Best idea I’ve had all day. So I highly suggest you try the same. It was de-lic-ious.
